One of the hottest spots in Gettysburg is the Blue Parrot Bistro at 35 Chambersburg St. Locals and tourists alike flock to this trendy eatery to delve into its trove of gustatory treasures.

“It’s a bistro,” says co-owner and chef Allison Giles. “Bistro means quick service, good food, comfortable setting. Quick. Quick. Quick.” Her definition sums up the reasons for the Blue Parrot’s popularity.

Giles and her sister, Holly, have been at the helm of the restaurant for 20 years, and it is their commitment to fine dining and customer service that keeps people coming back.“I first bought the business as an investment,” explains Holly Giles.

“It was a bar. I thought I would sell it, but decided if Allison wanted to work here, I would give it a go.” Teaming up with Allison in the kitchen and Holly in the front of the house, the restaurant has garnered a reputation for fine dining, for being a showcase for local artists, and for being a supporter of the community.
